Spiced Quinoa Porridge with Raisins & Goji Berries
Warm porridge made with protein-rich quinoa, berries and warming spices is a beautiful way to start a blustery autumn day. Oats can be too drying at this time of year, so they are best avoided, especially by those who are predominantly vata.
Quinoa is a lovely alternative and keeps hunger at bay until lunchtime! Goji, raisins and blueberries are packed with vitamin C, helping to stave off those seasonal germs.
Here’s how to make it;
1/2 cup of quinoa
Plant-based milk such as almond or pea
1 tsp ghee
Raisins
Goji berries
Blueberries
Cinnamon stick
Pinch of ground cardamom
4 whole cloves
1/2 tsp dried ginger
Sprinkle of bee pollen
Cook the Quinoa and drain.
Add your plant milk of choice, plus the raisins and all the spices and simmer for around 10 minutes.
Turn off the heat and stir in the goji berries and blueberries.
Garnish with a sprinkle of bee pollen.
