Kitchari – Ayurvedic Gut Reset
I’ve become so obsessed with this gut-balancing wonder food, I could literally eat it every day! We live in crazy times with crazy schedules, and sometimes the best thing we can do for our bodies is to keep things simple.
Kitchari is considered the most healing food in Ayurveda because it is so easy to digest (which gives the system a break to restore itself). It’s Satvic and Tridoshic, which means it’s super healthy and suitable for any constitution. If you’re suffering from any digestive issues like gas, bloating or indigestion, or just generally feeling under the weather, I’d really recommend it.
How to make it;
2tbs ghee
2 tsp cumin seeds
2 tsp fennel seeds
1 tsp mustard seeds
2 tsp ground coriander
1 inch grated ginger
1 tsp turmeric powder
1/4 tsp asafoetida
1 litre water + veg stock cube
1 cup white basmati rice (soaked overnight)
200g green mung beans (soaked overnight)
Coriander leaves and juice of 1/2 lime to serve.
You can add any winter veg you like. My favourites are butternut squash and kale which suit my Pitta constitution. Sweet potato and mustard greens work for Vata and Cauliflower and dandelion greens for Kapha dosha.
Heat the ghee over a medium heat, then add the cumin, fennel and mustard seeds,
cook until the seeds begin to pop, then add the coriander, ginger, turmeric and asafoetida.
Stir in the rice, mung beans and vegetables of your choice.
Bring to the boil and simmer, stirring occasionally, for about 40-50 minutes until everything is really soft.
Season with salt and pepper.
Top with coriander leaves and lime.
